Verjus Vinaigrette for Seasonal Garden Salad

Ingredients

  • 1 clove garlic
  • 1 shallot
  • 1 tbsp Dijon mustard
  • 1 tbsp honey
  • 1/2 cup Verjus
  • juice of 2 lemons
  • 1/4 cup olive oil
  • salt and pepper
  • 1/2 cup canola oil

Instructions

  1. Combine all but the oil in blender or food processor.

  2. With motor running, slowly add 1/2 cup canola oil, blending until thick.

  3. Serve on fresh, seasonal garden salad.
